My Background

Irish by birth, Chef Jaime was brought up in Surrey, UK. Just a short train ride outside of London where he studied an International Diploma at Westminster College in Victoria.

His natural ability and flare in the kitchen lead Jaime to work in some of Londons best kitchens. Jaime has worked with a number of renowned chefs, including Marcus Wareing, Gordon Ramsay, Angela Hartnett, John Williams MOGB of the Ritz and Martyn Nail at Claridges. In Spain Jaime opened James Hewitt’s flagship restaurant and 2 Michelin star Chef Jean-Cristophe Novilli’s restaurant, Novelli’s.

In Jaime’s 15 years in Spain he also opened Adare, a boutique restaurant and provided Chef services to Marbella’s wealthy and royals that holiday in the area.

From here Jaime travelled the globe with a Saudi Sheikh and also with Prince Jefri of Brunei.

Now in Melbourne, Australia, Jaime provides busy parents and professionals with bespoke, healthy meals made from the freshest local produce to save time and help his clients achieve their food goals.

Jaime set-up ChefDine to fill a gap in the market. Not only to save time and provide good quality meals but to reduce food waste and create a more sustainable food option.


He also teaches cookery, both on and off-line. Jaime’s main course (What Everyone Should Know) is one of the most in-depth cooking courses online.
